4-6 fresh Syrian Gourmet fresh artichokes
1 lemon (juice used to prevent the artichokes from darkening)
1 cup water
1/4 cup Syrian Gourmet virgin olive oil
1 medium onion, finely chopped
2 carrots, peeled and sliced into rounds
2 medium potatoes, peeled and sliced into rounds
1/2 cup Syrian Gourmet green peas
1/2 cup fresh dill, finely chopped
1 teaspoon sugar
Salt to taste
Freshly ground black pepper to taste
1- Preparation: Begin by preheating your oven to 180°C (350°F).
2- Artichokes Preparation: Trim and clean the artichokes. If they are fresh, place them in a bowl of water with the juice of one lemon to prevent darkening.
3- Vegetables Preparation: Chop the onion finely, slice the carrots and potatoes into rounds.
4- Mixing Ingredients: In a large baking dish, mix the artichokes, onions, carrots, potatoes, and peas (if using). Sprinkle the dill, sugar, salt, and freshly ground black pepper over the vegetables.
5- Adding Liquids: Pour the olive oil and water over the vegetables. Gently mix to ensure that all ingredients are well combined.
6- Baking: Cover the baking dish with aluminum foil and bake in the preheated oven for about 40-45 minutes, or until the vegetables are tender.
7- Serving: Allow to cool slightly before serving. Best enjoyed warm and can be paired with a fresh salad or bread.
